Ingredients

  • 1 t. seasoned salt
  • 1/4 c. flour
  • 1-1/2 pounds chicken breast cutlets
  • 2 T. butter
  • 1 T. capers
  • 2 T. fresh lemon juice (and a few thin slices of the lemon
  • 1/4 c. white wine (Chardonnay or Sauvignon Blanc are good choices)

Step 1

Place flour and seasoned salt in a bag – shake to mix. Add chicken and shake to coat.

Preheat large pan on high 1–2 minutes. Place 2 T. butter in pan and swirl to coat. Using tongs, add chicken and sauté 8–10 minutes, turning halfway through cook time.

Combine capers, lemon juice and wine in a small mixing bowl and add to chicken. Cook 2–4 minutes, stirring occasionally to reduce liquid.

Garnish with thinly sliced lemon.
