Homemade Marshmallows

- Cooking spray
- Powdered sugar
- 2 1/2 Tbl. unflavored geletin
- 1 cup water,divided, plus 1 Tbl.
- 1 1/2 cups sugar
- 1 cup light corn syrup
- 1/4 tsp. salt
- 2 tsp. vanilla

Preparation
Step 1
1. Lightly coat an 8" square pan (at least 2" deep) with cooking spray.
2. Heavily dust the pan with powdered sugar and set aside.
3. In the bowl of a standing mixer, stir together the gelatin and 1/2 cup of the water. Let stand 25 minutes.
4. In a havy 2qt. saucepan,combine the remaining 1/2 cup of water, sugar, corn syrup and salt. Cook, stirring constantly, over low to medium-low heat until the sugar has dissolved.
5. Increase heat to medium-high and bring to a boil,stirring often. Clip a candy therometer to side of pan. Reduce heat to medium and boil at a moderate,steady rate,stirring frequently unitl the thermmometer registers 244.F., about 15 minutes.
6. With the standing mixer(USE WHISK ATTACHMENT)on low to medium-low, slowly our the hot sugar mixture into the gelatin mixture. Lincreae mixter to high and beat 15 minutes. Mixture should be thick,white, and nearly triple in volume.
7. Add the vanilla and 1 Tbl. of water, then beat until combined.
8. Spoon the mixture(it will be very sticky) into the prepared pan. Let stand, uncovered, overnight.
9. Loosen mixture frompan by running a knife around the edges. Invert onto a cutting board dusted with powdered sugar. With a large knife, cut the block of marshmallow into 1" squares. Dust the squares with additional powdered sugar.
10. Store in air-tight container, or if giving as a gift, package in clear cellophane bags with twist-ties.
