Ingredients

  • 3 cups cooked yellow squash
  • 1/2 cup onion; chopped
  • 1/2 stick butter
  • 3 slices white sandwich bread
  • 1/3 cup carnation can milk
  • 2 eggs, lightly beaten
  • 1 cup sharp cheddar cheese; shredded
  • 1/2-2/3 cup sour cream
  • salt and pepper to taste
  • 1 stack ritz crackers; crushed
  • 1 stick margarine; melted

Step 1

Cut up squash in bite size chunks; not too small; cover with water and cook until fork tender. Cook onion in butter in microwave until tender. Put bread in bowl and cover with milk; mash bread up with hand until creamy. Combine all steps and pour into a greased 13x9 casserole dish. Cover with crackers and sot with butter. Bake at 350 degrees for 35-40 minutes. Taste before putting into dish to check the salt and pepper.
