Grandma's Famous Bannock

This is a recipe that I used to make for when we went camping in Alberta. Its good to have when you get up in the morning and the kids are hungry and the fire isn't going yet. Its a northwest coast recipe, from the Vancouver sun.

Ingredients

  • 2 cups lukewarm water
  • 2 tsp salt
  • 2 Tbsp sugar
  • 2 Tbsp vegetable oil
  • 1 1.2 tsp instant yeast
  • 6 cups flour

Preparation

Step 1

In a large bowl, combine lukewarm water, salt, sugar, oil, and yeast. Add six cups of flour, mixing by hand when dough becomes stiff. Turn dough out on to lightly floured surface. Knead for 10 minutes or until smooth and elastic. Let rise for one and a half hours. Punch down.
Pat dough into a 12 by 18 inch oblong shape. Cut into 2 inch wide strips. Cut strips into 2 inch squares. Flatten squares very gently with the palm of your hand.
In large heavy fry pan, heat 1 inch of oil over high heat to 375F, or until a small piece of dough floats. Fry until golden brown, about five minutes, turning bannock over half way through frying.

Variations: For raisin bannock, add one cup raisins with flour. For cinnamon bannock, combine 1/2 cup packed brown sugar with two Tbsp cinnamon. With knife, spread softened butter on warm bannock an sprinkle with sugar mixture.
