Sparkling Sugarplum Cookies

• 1 cup dried apricots
• 1/2 cup pitted dates
• 1/2 cup golden raisins
• 1 cup pecans
• 2 cups vanilla wafers, crushed
• 1 cup sweetened flaked coconut
• 1/2 cup orange juice
• 1/2 cup sugar

Preparation

Step 1

Finely chops apricots, dates, raisins and pecans in a food processor. Combine with wafer crumbs in a large bowl; toss with coconut and orange juice. Form 3/4" balls; roll in sugar and place in paper mini muffin liners.
