Sausage Packet With Cannellini Beans

Ingredients

  • 1 can cannellini beans - (15 1/2 oz) drained
  • 1 small onion sliced thinly
  • 3 plum tomatoes diced
  • 2 tablespoons fresh basil cut thin strips
  • 1 tablespoon extra-virgin olive oil
  • Freshly-ground black pepper to taste
  • 1 piece aluminum foil - (36" long)
  • 4 pork Italian sausage links
  • Salt to taste

Preparation

Step 1

Preheat grill on high.

In a bowl, toss beans, onions, tomatoes, olive oil, and basil together. Season with salt and pepper.

Take a 36-inch piece of foil and fold in half to create a double thickness. Place bean mixture on one half and top with sausage links. Fold over other half of foil to cover. Crimp 3 edges of foil together to seal, forming a pouch.

Place packet on grill (sausage-side down) and cook 10 minutes on high. Flip carefully, and cook 10 minutes longer or until juices run clear. Open pouch carefully -- steam is hot.

This recipe yields 4 servings.
