Ingredients

  • 1 1/2 pounds ground pork
  • 1/2 pound ground turkey
  • 2 teaspoons ground sage
  • 1 1/2 teaspoons salt
  • 1-1 1/2 teaspoons black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon fennel seed, crushed, optional

Step 1

Combine ground pork, ground turkey, sage, salt, black pepper, thyme and fennel seed, if desired, in large bowl; mix well. Cover and refrigerate for at least 1 hour or up to 24 hours.


For each sausage patty, shape 1/4 cup pork mixture into a 1/2-inch-thick patty, about 2 1/2 inches in diameter.


Heat a large skillet over medium-high heat until hot. Add enough sausage patties as will fit without crowding the skillet. Cook sausage patties about 4 minutes, turning over halfway through cooking time.


Reduce heat to medium-low and continue cooking until sausage patties are no longer pink in center, about 6 to 8 minutes, turning over halfway through cooking time. Repeat with remaining sausage patties. Keep patties warm until ready to serve. Serve with scrambled eggs, fresh fruit and muffins, if desired.
