Ingredients
- 1 stick butter, softened
- 1/4 cup powdered sugar
- 1 cup flour
- 1/8 teaspoon salt
- 1 cup sugar
- 2 eggs
- 2 large lemons, juiced and zested
- 2 tablespoons flour
- Powdered Sugar

Preparation
Step 1
Preheat oven to 350 degrees and lightly grease an 8x12 baking dish.
In a mixing bowl, cream butter and powdered sugar together until fluffy. Slowly add 1 cup flour and salt and continue to beat until dough begins to form ball.
Remove dough ball from mixing bowl. Using your hands press dough into the bottom of greased baking dish.
Place baking dish into oven and bake for about 20 minutes or until crust is golden brown. Once done, remove from oven and let cool.
While crust is baking, beat together eggs and sugar until well blended. Add lemon juice, lemon zest and flour. Continue to mix until mixture is smooth.
Pour lemon filling over cooled crust, return to oven to bake another 20 minutes or until lemon is set and firm.
Sprinkle with powdered sugar and serve.
