Ingredients
- 8 egg yolks
- 1 cup sugar
- 1/4 cup milk
- 2 cups whipping cream, chilled
- 8 ounces cream cheese, softened
- 8 ounce ricotta cheese
- 1/4 cup amaretto
- 2 cups brewed hazelnut flavored coffee, room temperature
- 50 lady fingers
- 2 1/2 ounces bittersweet chocolate, grated
- Cocoa powder

Preparation
Step 1
In a saucepan beat egg yolks. Place on heat source over medium low. Stir in 1/2 cup sugar and milk and continue to stir until well blended.
Bring to a low boil, stirring constantly. Remove from heat. Cover with plastic wrap and refrigerate. Make sure plastic wrap touches surface of egg mixture to be sure that a skin doesn’t form on top.
Beat whipping cream until stiff peaks form. Set aside in refrigerator till needed.
In a large mixing bowl, blend cream cheese and ricotta. Stir in remaining sugar.

Remove egg yolk mixture from refrigerator and gently stir into cheese mixture.
Take one third of whipped cream and fold it into egg and cheese mixture. Repeat with remaining whipped cream and set aside.
In a large bowl stir together coffee and amaretto. Dip ladyfingers in coffee mixture and then place them on an 8 x 12 baking dish until bottom is covered.
Sprinkle lady fingers with one third of grated chocolate.
Next cover ladyfingers with one half of cheese mixture.
Repeat process again by adding another layer of dipped ladyfingers, grated chocolate and finishing with a layer of cheese mixture.
Sprinkle on cocoa powder and garnish with remaining third of grated chocolate.
Chill at least 2 hours before serving.
