Ingredients

  • 2 cups all-purpose flour
  • 1 Tablespoons baking powder
  • 1 Tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup shortening
  • 1/4 cup (1/2 stick) butter plus 1 Tablespoon melted butter, divided
  • 1 cup buttermilk

Preparation

Step 1

Preheat oven to 425°F. Combine the flour, baking powder, sugar, salt and baking soda in a medium bowl. Cut in the shortening and 1/4 cup butter with a pastry blender or 2 knives until coarse crumbs form.


Make a well in the center and add the buttermilk. Quickly fold the dry ingredients into the buttermilk with your hands until a sticky dough forms.


Transfer the dough to a floured surface. Gently fold the dough over itself 3 or 4 times to create layers. Roll the dough to a 1-inch thickness.


Cut with a 3-inch biscuit cutter, pushing straight down through the dough. Repeat with any remaining scraps of dough. Place the biscuits on a baking sheet 1/4 inch apart. Brush with the melted butter. Bake until golden brown, 20–22 minutes. Cool slightly.
