Ingredients
- 1 (3 lb) pineapple, peeled and diced
- 1/2 lb jicama, peeled and cut into 1/4" pieces
- 1 avocado, cut into cubes
- 1 small red onion, thinly sliced (~1/2 cup)
- 1/4 cup fresh cilantro, chopped
- 2 TBS olive oil
- 1 TBS white vinegar
Preparation
Step 1
Toss together all ingredients with salt and pepper to taste.
Makes 4 servings. 3 Weight Watchers points per serving.
