Ingredients
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 3/4 cup milk
- 1/3 cup semisweet chocolate chips
- 3 tablespoons cocoa powder
- 2 eggs, separated
- 1/2 cup sugar
- 2 teaspoons instant coffee crystals
- 1 teaspoon real vanilla extract
- 2 cups whipping cream, divided, chilled and whipped
- 1 bar dark chocolate, chilled and shaved

Preparation
Step 1
Gently stir together gelatin and water in mixing bowl. Set aside for 5 minutes.
Meanwhile, combine milk, chocolate chips and cocoa powder in saucepan. Cook over low heat until chocolate melts. Remove from heat.
Place egg yolks and sugar in a mixing bowl. Stir well to combine. Slowly add one quarter of the warm chocolate mixture into egg yolk mixture. Stir constantly.
Add egg yolk and chocolate mixture back into the sauce with warm chocolate. Stir well to incorporate.
Add coffee crystals to chocolate mixture. Return saucepan to heat and cook over low until mixture thickens. Stir constantly. Remove from heat. Stir in gelatin, vanilla. Chill until slightly thickened (about as thick as unbeaten egg whites).
While coffee/chocolate mixture is chilling, beat egg whites until they are stiff and form peaks. Take about one quarter of the egg whites and gently fold them into the mocha mixture. Continue to gently fold in remaining egg whites into mocha mixture.
Next gently fold in 1 cup whipped whipping cream. Spoon mocha into a 1 quart serving dish. Chill for about 2 hours before serving. Before serving top with remaining whipped cream and shaved chocolate.
