Spinach Quiche Bites

Ingredients
- 1 pkg. (15oz.) refrigerated pie crusts
- 2 slices bacon, cooked and crumbled
- 1/4 cup chopped green onions
- 2 eggs
- 1/2 cup half-and-half
- 1/3 cup grated Parmesan cheese
- 1/4 tsp. salt
- 1/8 tsp. nutmeg
- 1 pkg. (9oz.) frozen spinach, thawed and squeezed to drain

Preheat oven to 375 degrees.
Soften both crust pouches to soften – heat on defrost on microwave for 20 to 40 seconds.
Unfold pie crusts and use a 2 ½ inch round cutter and cut 12 rounds. Press each round in bottom and up sides of ungreased miniature muffin cup pan. Repeat with second crust.
Place onions in skillet until brown and crisp. Drain on paper towels. Add onions to same skillet with bacon drippings; cook 2 to 3 minutes or until tender, stirring constantly. Drain.
Place onions in medium bowl. Add crumbled bacon and add to onion. Add eggs to bacon and onions and beat well. Stir in half and half, cheese, salt and nutmeg. Add spinach; mix well. Divide mixture evenly into crust-lined cups.
Bake for 20 to 25 minutes or until puffed and golden brown. Cool in pan on wire rack for 10 minutes. Loosen and remove quiches from pan with tip of knife. Serve warm or cool.
