Ingredients

  • 2-3 boneless chicken breasts
  • 1 egg white
  • 1 t cornstarch
  • 1 t salt
  • 1 t soy sauce
  • dash white pepper
  • 4 oz pea pods
  • 2 T cornstarch
  • 2 T cold water
  • 3 T vegetable oil
  • 2 cloves minced garlic
  • 1 t ginger root
  • 2 T vegetable oil
  • 1 lb (or 1 small can) mushrooms-sliced
  • 1 c chicken broth

Preparation

Step 1

cut chicken into small bite size strips.

mix egg white, 1 t cornstarch, salt, soy sauce and white pepper in a zip-loc--add chicken pieces-chill for at least 30 minutes.

meanwhile, take strings off of peapods and boil for 1 minute-drain.

stir fry chicken and onions until chicken is no longer pink. Add shrooms, garlic, ginger-add broth and simmer until tender.

thicken with water and cornstarch--serve over white rice
