Ingredients
- Green Rice
- 3 1/3 cups water
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups uncooked white rice
- 1 sweet red pepper, thinly sliced
- 1 7 ounce container (7 ounces) prepared pesto (3/4 cup)
- Garlic Shrimp
- 2 tablespoons oil
- 3 cloves garlic, coarsely chopped
- 1 1/4 pounds small shrimp (1-1/2 pounds with shells)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper

Preparation
Step 1
Rice:
1. In saucepan, bring water, salt and pepper to a boil. Add rice. Reduce heat to low; cover and cook 15 minutes. Sprinkle red pepper over rice. Cover; cook 5 minutes. Reserve 2 tablespoons pesto for shrimp. Stir remainder into rice; keep warm.
Shrimp:
1. Meanwhile, in 12-inch skillet, heat oil over medium heat. Add garlic; cook 3 minutes. In bowl, mix shrimp, salt, pepper, reserved pesto.
2. Increase heat to medium-high. Add shrimp; saute 4 to 6 minutes.
3. Transfer rice to platter. Top with Garlic Shrimp and liquid from skillet. Serve immediately.
