Ingredients

  • 12 ounce(s) spicy Italian sausage, casings removed
  • 3 clove(s) garlic, pressed
  • 2 tablespoon(s) tomato paste
  • 1 can(s) (28-ounce) crushed tomatoes
  • 1 tablespoon(s) red wine vinegar
  • 1/2 teaspoon(s) salt
  • 1/2 cup(s) finely grated Parmesan cheese, plus more for sprinkling, if desired
  • 1/4 cup(s) heavy cream
  • 1 pound(s) cooked rigatoni

Preparation

Step 1

In large skillet on medium-high, cook Italian sausage 5 minutes or until browned, breaking up meat with spoon. With slotted spoon, transfer sausage to bowl. Discard all but 1 tablespoon fat in skillet.

Return sausage to skillet along with garlic. Cook 30 seconds. Stir in tomato paste and cook 2 minutes, then stir in crushed tomatoes, red wine vinegar, and 1/2 teaspoon salt and heat to simmering.

Cook 7 minutes or until thickened slightly. Stir in 1/2 cup finely grated Parmesan cheese and heavy cream. Serve over rigatoni with more Parmesan cheese, if desired.
