Ingredients

- 3 tbsp. pot barley
- 1 cup chicken broth
- 2 ounces fresh baby spinach
- 1 tsp. extra virgin olive oil, paprika olive oil or chili oil
- 6 spears asparagus, cut on the diagonal, or 1 cup broccoli florets, or combination
- 1 green onion , sliced or 2 tbsp. minced fresh chives
- 1 tablespoon each chopped fresh basil and parsley
- 1 egg, poached
- 4 cherry or grape tomatoes, halved
- 1 tablespoon freshly grated parmigiano reggiano or pecorino romano

Preparation
Step 1
* Boil barley in water until tender, about 50 minutes, then drain, adding broccoli or asparagus for last 3-5 minutes.
* Bring broth to a boil and poach egg in it, if using.
* Place fresh spinach and green onions or chives in bottom of a large bowl. Top with barley and asparagus and herbs and poached egg and pour boiling stock over everything.
Drizzle with chili oil and season to taste with salt and pepper and a few drops of truffle oil and the grated cheese.
