Shortbread Cookies

Ingredients
- Cream Cheese Frosting:
- 1 cup butter, softened
- 2 cups flour
- 1/2 cup superfine sugar
- 2 tbsp. cornstarch
- 8 oz. pkg. cream cheese, softened
- 1/2 cup butter, softened
- 2 tsp. vanilla
- 16 oz. pkg. powdered sugar
- optional: few drops of food coloring
- With electric mixer on medium speed beat cream cheese and butter together. Add vanilla and mix well. On low speed, add powdered sugar until mixed. Beat on high speed for one minute. Tint if desired.

Step 1
Combine all ingredients in a medium bowl and knead to form a smooth dough. Roll out on a floured surface to 1/4 inch thick. Cut out with a cookie cutter. Transfer to an ungreased cookie sheet. Bake at 275 degrees for 45 minutes; cool.
Frost with cream cheese frosting. Refrigerate until set or ready to serve.
