Whole Wheat Bread (Lisa's)
This is a soft, chewy, tender loaf of wheat bread. My fav!
- 14 cups (about) whole wheat flour
- 2 rounded Tablespoons dry yeast
- 6 Tablespoons gluten flour or Dough enhancer
- 6 cups hot water 120°
- 1/2 cup oil
- 1/2 cup honey
- 11/2 - 2 Tablespoons salt
- Makes 5-6 loaves
MIX: 1/2 of the wheat flour, yeast, and gluten flour or dough enhancer. Add water and mix well. Cover and let mixture sponge 10 minutes
Add oil, honey, salt. Mix and begin adding wheat flour one cup at a time until dough cleans the sides. Do not add too much flour or dough will be tough, heavy and dry. The dough should be a little sticky but smooth. Knead for 6 minutes in the mixer. If mixing by hand, knead for 12-15 minutes. Cover hands and surface with oil,divide and form loaves; place in lightly oiled bread pans. Let rise for 30-60 minutes, until double
Bake at 350° for 25-30 minutes.
Remove from pans and place on cooling racks. Store bread in plastic bags in freezer until needed.
