Ingredients

  • Topping:
  • 6 T flour
  • 1/4 C brown sugar
  • 2 T butter
  • Muffins:
  • 1/2 C margarine, melted
  • 1 C white sugar
  • 1 egg
  • 1 1/2 t. vanilla
  • 1 1/2 C flour
  • 1 1/2 t. baking powder
  • 1/2 t. baking soda
  • 1/4 t. salt
  • 1 C grated zucchini
  • 1 C cranberries
  • 1/2 C walnut pieces, optional

Preparation

Step 1

1. Preheat oven to 375 degrees. Prepare 12 muffin cups.
2. Topping: Mix 6 T flour and b. sugar together. Cut in butter.
3. Beat margarine and white sugar with mixer until light and fluffy. Beat egg and vanilla into butter mixture.
4. Mix 1 1/2 C flour, baking powder, baking soda, and salt together in separate bowl; gradually beat into the butter mixture. Fold zucchini, cranberries and nuts (optional) into the mixture. Spoon into prepared muffin cups, filling nearly to the top. Sprinkle topping onto the batter.
5. Bake about 25 min.
