Ingredients
- 4 eggs
- 3/4 c. sugar
- 2 c. milk
- 1 1/3 c. cooked rice
- 1 1/2 tsp. lemon juice
- 1 1/2 tsp. vanilla
- 1 Tbsp. melted butter
- t tsp. nutmeg
- 2/3 c. seedless raisins

Step 1
Preheat oven to 350 degrees and grease a 2 quart casserole.
Combine eggs, sugar and milk and beat well. Fold in rice and remaining ingredients. pour into prepared casserole dish and place in a larger pan and pour boiling water around casserole dish up to about 1 inch. Bake at 350 for 1 hour or until custard is set. makes six servings.
