Ingredients
- 6 qts. very cold water
- 3/4 cup kosher salt
- 3/4 cup sugar or honey
- Chicken or pork...beef tends to dry out on the grill.

Step 1
Dissolve sugar, if using in an extra 1 cup hot water. Mix everything together in a lg. stockpot or bowl
Add meat, cover and refrigerate 1-6 hours. The longer it brines, the saltier it will be.
Discard brine. Pat meat dry. Brush with oil and season with ground black pepper. Grill until cooked through.
Chicken breasts and pork tenderloin only need to marinate for about an hour--the larger the cut, the longer it should stay in the brine before grilling.
