  • 12 oz. pork sausage, cooked and drained
  • 1/2 c. finely chopped onion, sauteed
  • 4 c. frozen hash browns, thawed
  • 3 beaten eggs
  • 1 c. milk
  • 1/4 tsp. pepper
  • Your favorite salsa

Step 1

Oil an 8x8" baking dish. Layer the potatoes, onions, half the cheese, the sausage, and the remaining cheese in dish. Beat the eggs, milk, and pepper until foamy. Pour over the cheese. (At this time, you may cover and chill overnight.)

Bake covered for 50-60 minutes or until a knife inserted in the center comes out clean. Remove from oven and let stand 10 minutes. Cut in squares and serve with salsa on the side.
