Ingredients

  • 1 Tbs. olive oil
  • 1 onion, chopped
  • 8 oz. sliced mushrooms
  • 1/2 large bell pepper, chopped
  • 1 tsp. minced garlic
  • 6 eggs
  • 3/4 c. grated Swiss cheese
  • 1/4 c. grated Parmesan
  • Salt and pepper to taste

Preparation

Step 1

Heat olive oil in an oven-proof skillet over medium-high heat. Add vegetables and garlic and saute until tender. While they are cooking, beat eggs until foamy. Add cheeses, salt, and pepper.

Reduce heat to medium. Make sure vegetables are distributed evenly over the bottom of skillet. Pour eggs in. Cook, without stirring, until only the top of the mixture is runny (around 7-8 minutes).

Turn on broiler. Put skillet under broiler and cook until frittata is just set, about 1 1/2 - 2 minutes. Do not allow to brown!
