Ingredients

  • Chicken Drumsticks
  • 1 Brown Onion, chopped
  • 1 Carrot, sliced
  • 400 g Diced Tomatoes
  • 2 Cups Chicken Stock
  • 1 Cup Rice
  • 1/2 cup Peas
  • 1/2 cup Red Kidney Beans
  • 1/2 Teaspoon Cumin
  • 1 Teaspoon Paprika
  • Salt & Pepper

Preparation

Step 1

*Brown chicken drumsticks and set aside.
*Saute onion in a pot until soft.
*Add diced tomatoes, chicken stock, rice and spices.
*Bring to boil, then simmer.
*Place drumsticks back into pot and simmer closed.
*Once rice is done, add peas and beans, and cook a further 10 mins.
*Cover lid and leave closed for 20 mins before serving.
