This Cream Condensed Soup is a recipe that I use the most lately. It tastes much better than the canned option and doesn't have ingredients you cannot pronounce. You can find this in both cookbooks.

Ingredients

  • Cream Condensed Soup Substitute
  • 1 tablespoon butter
  • 3 tablespoons flour
  • 1/2 cup low sodium chicken broth
  • 1/2 cup 2% milk
  • optional 1/4 cup mushrooms, diced onion or diced celery depending on which soup you would like.

Preparation

Step 1

Melt butter in a saucepan on medium heat. Whisk in the flour to create a roux. Add the chicken broth and then the milk, whisking constantly to prevent lumps. Bring to a boil and cook, stirring constantly until mixture thickens. You can add chopped mushrooms, diced onion or diced celery. Freeze in 1 cup portions in small plastic freezer bags or mason jars. To serve: Thaw and add to your favorite recipe.
