Ingredients
- 1 tablespoon vegetable oil
- Half of 1 medium onion, chopped
- 1 medium stalk celery, chopped
- 1 medium carrot, shredded
- 3 cups chopped chicken
- 4 cups cooked brown rice
- 1/2 teaspoon sesame oil
- 1 tablespoon low sodium soy sauce

Preparation
Step 1
Heat the oil in a large non-stick skillet or wok over medium-high heat; sauté onion, celery and carrot for about 4 minutes or until vegetables are tender-crisp. Add chicken, cooked rice, sesame oil and soy sauce; continue to cook for 3 to 4 minutes or until hot.
SERVING SUGGESTION: Bake some of your favorite frozen egg rolls to serve on the side.
