Ingredients
- 1/2 cube butter
- 1 lg. chopped onion
- 4 C freshly cooked rice
- 2 C sour cream
- 1 C creamed cottage cheese
- 1 crumbled bay leaf
- 1/2 tsp salt
- 1/2 tsp pepper
- parsley
- 4 cans (4-oz each) green chili (ortega)
- drained & cut sliver thin slices
- 2 C grated sharp cheddar cheese

Preparation
Step 1
in lg skillet heat butter & saute onion
until golden (5 min)
remove from heat
stir in cooked rice, sour cream, cottage
cheese & seasonings
mix well
lightly greese 2-qt shallow (or 12x8x2"
oblong baking dish
put in 1/2 rice, cover w/ 1/2 chili &
1/2 cheese
repeat
cook uncovered 30 min
can make ahead & refrig 2 days & then
cook or can freeze
