Ingredients

  • 1/2 cube butter
  • 1 lg. chopped onion
  • 4 C freshly cooked rice
  • 2 C sour cream
  • 1 C creamed cottage cheese
  • 1 crumbled bay leaf
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • parsley
  • 4 cans (4-oz each) green chili (ortega)
  • drained & cut sliver thin slices
  • 2 C grated sharp cheddar cheese

Preparation

Step 1

in lg skillet heat butter & saute onion
until golden (5 min)
remove from heat

stir in cooked rice, sour cream, cottage
cheese & seasonings
mix well

lightly greese 2-qt shallow (or 12x8x2"
oblong baking dish

put in 1/2 rice, cover w/ 1/2 chili &
1/2 cheese
repeat
cook uncovered 30 min

can make ahead & refrig 2 days & then
cook or can freeze
