Ingredients

  • 2 tbsp. olive oil
  • 2/3 cup flour
  • salt & pepper
  • spices ( I used cumin, ground coriander and cayenne)
  • 1 can diced tomatoes
  • 1/2 cup salsa
  • water
  • tortillas ( I used corn)
  • cheese
  • can add cooked chicken too

Preparation

Step 1

Heat the oil and slowly add the flour a little at a time. Stir until browned. Then add water to make it saucy. Add tomatoes and salsa. Add salt, pepper, and spices to taste. Cook till bubbly.

Dip tortillas in sauce. Place in bottom of baking dish (9X13). Layer cheese, meat and then more tortillas. Continue layering (I think I had three layers) ending with tortillas on top. Pour leftover sauce over top and sprinkle with cheese.
Cook for 30 minutes at 350.
