MARGARITA CUPCAKES

Ingredients
- Cupcakes
- 1 pkg white cake mix (no pudding in the mix)
- 10 oz. Jose Cuervo Margarita mix (liquid in the bottle, this is non-alcholic so
- can get anywhere)
- 3 egg whites
- 2 Tablespoons Vegetable Oil
- 1 Tablespoon Lime Zest grated
- MARGARITA BUTTERCREAM ICING
- 2 sticks of unsalted butter (room temp)
- 1 1/4 lb. confectioner sugar (I think this is like 4 Cups)
- 2 Tablespoons fresh Lime juice
- 2 Tablespoons Jose Cuervo Margarita mix
- 2 Tablespoons of lime zest grated
- Margarita Salt or Kosher Salt
- Green gel paste food color

Step 1
- Cupcakes
Preheat Oven to 350. Mix together in large bowl, cake mix, margarita mix, egg
whites and vegetable oil until smooth. Stir in lime zest by hand. Fill cupcake
pan 2/3 full. Bake 22-24 minutes.
- MARGARITA BUTTERCREAM ICING
In mixer, beat butter on med-high until creamy. Reduce speed and gradually add
the 4 cups of confectioners sugar 1/2 cup at a time. Increase speed and beat
until smooth. Add margarita mix and lime juice. Beat until frosting is
smooth. Add food coloring a drop at a time to get to the shade of green you
would like. I usually make it like a key-lime color green. Add lime zest and
stir in by hand. Once cucpakes are cool, you can then frost.
To frost cupcakes, I use a frosting bag and a decorating tip that has a large
round hole in it. I tried using the large star tip but the zest gets caught in
it so the large round hole tip did better. Sprinkle a dash of margarita salt on
top for decoration.
