Ingredients
- 1/4 lb. bacon, diced
- 2 Tbsp butter
- 1 med. onion, chopped
- 3 celery stalks, diced
- 1 jalapeno, diced
- 1 Tbsp. thyme
- 3/4 tea. chili powder
- 3 cups chicken broth
- 2 eggs
- 1 cup pepper jack, diced
- 8 cups toasted white bread cubes
- 6 cups crumbled cornbread

Step 1
In large skillet, saute diced bacon in butter for 5 minutes; transfer to paper towels.
Cook onion, celery, jalapeno, thyme and chili powder for 5 minutes. Pour in chicken broth and simmer.
In large bowl mix eggs, pepper jack cheese and the bacon. Add the white bread cubes and crumbled cornbread, mixing well. Pour in hot broth mixture.
Gently toss the stuffing, then spread in a buttered 9x13 baking dish. Dot with butter, cover and bake 30 minutes at 350 degrees. Uncover and bake until golden, 20 more minutes.
