Pork Stroganoff Gordon ramsey

Ingredients
- 500 g Pork Fillet ( 1lb )
- 1 tsp sweet smoked paprika, plus an extra pinch
- 4 T olive oil
- 1 onion finely sliced
- 2 garlic cloves finely sliced
- 8 oz brown mushrooms sliced
- splash of brandy
- 150 ml sour cream or double cream
- squeeze of lemon juice
- handful of flat leaf parsley : leaves chopped

Step 1
Trim pork and slice thinly: season with salt/pepper and a tsp of paprika
Heat half the olive oil in a wide fry pan till hot.
Add the onion: fry over med heat x 6-8 mins till soft/translucent stir freq
Add the garlicand mushrooms and increase the heat slightly.
Fry another 3-4 mins till the mushrooms are tender.
Tip the contents of pan onto a plate
add the remaining oil to the pan : fry pork over high heat .
Fry the meat x 1-11/2 mins till golden brown. Retyrn onions: garlic: mushrooms to the pan.
Add a splash of brandy: let boil until almost all reduced:
stir in the cream : bring to a simmer:
adjust seasoning: salt/pepper lemon juice:
throw in parsley: remove from heat. Serve sprinkled with paprika.
