Grilled Chicken Breasts with Cilantro Mayonnaise

Ingredients

  • 1 cup mayonnaise ( I use light)
  • 1/4 cup fresh cilantro
  • 3 Tablespoonfuls white wine vinegar
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 4 skinned and boned chicken breasts (about 1 pound)

Preparation

Step 1

Combine mayonnaise, cilantro 3 tbsp white wine vinegar, salt and pepper in a small bowl. Reserve 3/4 cup mayonnaise mixture to use as sauce after cooking. Brush chicken with the remaining 1/4 cup mayonnaise mixture.
Preheat grill to medium-high heat (350-400) Grill chicken 7 to 10 minutes on each side or until done. Great to grill corn on the cob at the same time! Serve with reserved mayonnaise mixture.
