Valentines Day Rice Krispie Treat Cupcakes

These Valentine’s Day Rice Krispie Treat Cupcakes are super cute to share for Valentine’s Day! They are actually flavored with a strawberry cake mix, but you could use any flavor. The pink cake mix is what gives them their pretty color. They’re topped with vanilla icing and a festive gummy heart. I’m in love with them!

Ingredients

• Rice Krispie Cupcakes
• 4 tbsp butter
• 10 oz bag marshmallows
• 1/2 cup dry strawberry (or other flavor) cake mix
• 5-6 cups rice krispie cereal
• Vanilla Icing
• 1/4 cup butter
• 1/4 cup shortening
• 2 cups powdered sugar
• 1 tsp vanilla extract
• 1-2 tsp water
• gummy candy hearts

Preparation

Step 1

1. Grease a cupcake pan so that the rice krispies won't stick.
2. Melt butter in a large pot over low heat.
3. Add marshmallows and stir constantly until they are fully melted.
4. Stir in the dry cake mix. Remove pan from heat.
5. Stir in rice krispies cereal until it is completely coated in marshmallow mixture.
6. Spoon rice krispies into individual cupcakes and light press into pan. Don't press too hard, or your treats will be hard.
7. Allow to cool.
8. To make icing, combine butter and shortening and mix until smooth.
9. Add powdered sugar and mix until smooth.
10. Add vanilla extract and 1-2 tsp of water or cream and mix until smooth.
11. Top cupcakes with icing and a gummy heart.

Yield: 16-18 cupcakes
