- 2 t butter
- 2 eggs
- 1/2 c flour
- 1/2 cup milk or coconut milk
- 1/8 t fresh ground nutmeg
- Powdered sugar
- Lemon juice

Step 1
1) Preheat oven to 425*F.
2) Melt butter in a 12"cast-iron skillet or a cast-iron Drop Biscuit Pan
3) In a medium mixing bowl, beat the eggs. Add the flour, milk, and nutmeg and beat until blended but still somewhat lumpy.
4) Pour batter into skillet or Biscuit Pan and bake until pancake is putty on the edges and golden brown, about 15 minutes.
5) Using a fine-meshed sieve, sprinkle with powdered sugar and squeeze fresh lemon juice over top. Makes 4 servings
