Ingredients
- 3 cups low sodium chicken broth
- 1 (28-oz.) can diced tomatoes, undrained
- 1 (6-oz.) can tomato paste
- 1/2 cup red wine (or use red grape juice with a splash
- of vinegar)
- 1 teaspoon basil
- 1 teaspoon oregano
- 1/2 teaspoon crushed red pepper flakes
- 1 pound dried lentils, color of your choice
- 3/4 cup chopped onion
- 5 medium carrots, sliced into thin coins
- 3 medium stalks celery, chopped
- 3 cloves garlic, pressed
- Salt and pepper to taste

Preparation
Step 1
Place all ingredients in slow cooker. Cover and cook on low heat setting for 10 to 11 hours, or until lentils are tender.
SERVING SUGGESTION: A relish tray of raw baby carrots, cherry tomatoes and broccoli florets along with your
favorite dipping sauce (Ranch dressing?). Add grilled cheese sandwiches for a yummy meat-free meal.
