- 1 boneless pork loin (about 3#)
- 3 Tbsp. Dijon mustard
- 3 Tbsp. minced fresh parsley
- 1 Tbsp. minced fresh thyme
- 1 Tbsp. minced rosemary
- 1 Tbsp. minced garlic
- 1 Tbsp. oilve oil

Preparation
Step 1
Heat oven to 450 degrees. Season pork loin with salt and pepper. In bowl, combine remaining ingredients. Rub herb-mustard mixture evenly over pork.
Place pork in a roasting pan. Roast 10 minutes. Reduce oven temperature to 150 degrees. Roast 1 hour more or until instered thermometer reads 160 degrees.
Transfer pork loin to platter; cover loosely with foil. Let sit 15 minutes before slicing.
