Ingredients
- 1/2 Tbsp olive oil
- 1/2 Tbsp melted butter
- 1/4 tsp. salt
- 2 Large carrots, sliced
- 4 small red potatoes (12 oz) halved & sliced
- 1 golden delicious apple, cored and cut into 12 slices
- 1 medium onion, diced
- 3 cloves garlic, thinly sliced
- 1 tsp fresh thyme leaves, chopped or 1/4 tsp dried
- 1/8 tsp. freshly ground pepper

Preparation
Step 1
Heat oven to 400 degrees. Mix oil & butter in a small cup. Place carrots, potatoes, apple, onion and garlic on baking sheet. Drizzle with oil mixture, then sprinkle with salt, thyme and pepper. Toss to coat, then spread out.
Roast 30 minutes, turning vegetables over once. Increase temperature to 450 degrees and continue roasting 15 minutes turning vegetables once more, until vegetables are tender.
