Ingredients
- Stock
- carcass of rotisserie chicken
- 1 rib celery
- 1 chopped onion
- 2 chopped carrots
- 2 chopped leeks
- fresh parsley
- cloves of garlic
- soup
- stock
- 2 TBS chili powder
- 1 can chopped tomatoes with green chiles
- 2 cups chopped, cooked chicken
- avocado
- queso fresco
- tortilla strips

Preparation
Step 1
Put chicken carcass, celery, carrots ,onion, leeks, parsley and garlic in stockpot with 12 cups water.
Bring to a boil.
Reduce to simmer for 2 to 6 hours, strain through sieve.
Add soup ingredients and heat until warmed.
serve with avocado, tortilla strips, queso and lime wedges
