Ingredients

  • 3 T unsalted butter
  • 1 large onion, sliced thin
  • 1 large head or red cabbage, shredded
  • zest of 2 oranges
  • 1 tsp sugar
  • 1/2 C dry red wine
  • 1/2 C red wine vinegar
  • coarse kosher salt and freshly ground black pepper

Preparation

Step 1

Melt the butter in a large saute pan. Ad the onin and saute over medium-high heat until transparent, about 5 minutes.

Add the cabbage, zest, sugar, red wine, vinegar, salt and pepper to taste and mix well. Lower heat to medium and cook for an additional 15 minutes, stirring occasionally, until cabbage is wilted. Serve hot.
