- 1 15-oz 1 15-oz 1 1/2 fire-roasted diced tomatoes or 1 1/2 cups diced fresh tomatoes
- 1 6-oz 1 6-oz 6-oz can tomato paste
- 1 1 1 large sweet potato, diced
- 1 1 1 cup dry quinoa
- 1 1 1 onion, diced
- 5 to 6 5 to 6 6 cloves garlic, minced
- 1 1 1 tbsp olive oil
- 1 1/2 1 1/2 1/2 tbsp chili powder
- 1 1 1 tbsp cumin
- 1 1 1 tsp dried oregano
- 1 1 1 tsp garlic powder
- 1 1 1 tsp onion powder
- to salt, to taste
- 4 4 4 cups water or vegetable broth (more as needed)

- diced raw onion (optional)
- cilantro (optional)
