Ingredients
- CRUST:
- 1 C Butter, softened
- 1 C. Powdered Sugar
- 2 1/2 C. Flour
- 1/4 tsp. Salt
- FILLING:
- 7 Eggs, beaten
- 1 3/4 C. Sugar
- 1 C. Lemon Juice
- 1 1/2 tsp. Lemon Zest
- 1/2 tsp. Baking Powder
- 1/2 C. Flour

Preparation
Step 1
HEAT OVEN TO 325º.
Line a 9X13" pan with foil; then spray
the foil.
CRUST:
Mix well and press into bottom of
foil lined pan. Prick with a fork
all over. Bake 25 min.
FILLING:
Beat the eggs really good before
adding the rest of the ingredients.
Pour over hot crust and bake 30 min.
Cool on rack. Cover and put
in fridge for at least 1 hour.
Lift out of pan with foil. Cut into
bars. Powder sugar optional.
