Ingredients

  • 1 pkg banana quick bread mix
  • 3/4 c water
  • 3 TBSP vegetable oil
  • 2 eggs
  • 1 8oz can crushed pineapple drained and liquid reserved
  • 1/4 c coconut
  • 1 c powdered sugar
  • 1 TBSP melted butter

Preparation

Step 1

Heat oven to 350. Grease bottom only of 8 inch square pan.

In medium bowl, stir together quick bread mix, water, oil and eggs, until well blended. (Batter may be lumpy) Gently stir in 1/3 c of pineapple and 1/4 c of coconut. Spread in pan.

Bake 35-40 minutes (9 inch pan 25-30 minutes). Cool completely, about 1 hour.

Pineapple Glaze:
Stir powdered sugar, remaining crushed pineapple, 1 TBSP reserved liquid and melted butter, until smooth and spreadable. Cover top of cooled cake and serve.
