Ingredients

  • 6 med potaotes peeled & cubed (red or white)
  • 2 carrots, diced
  • 2 qts water
  • 1 onion, chopped
  • 6 tbsp. butter
  • 6 tbsp. flour
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 cup mild
  • 1/2 lb. bacon (cooked & crumbled

Preparation

Step 1

Cook potatoes & carrots in water until tender. Drain, reserving liquid & setting vegetables aside. In the same kettle saute onion in butter until soft. Stir in flour, salt & pepper. Gradually add milk, stirring constantly until thickened. Gently stir in cooked vegetables and bacon. Add enough of reserved water until desired consistancy. Top with grated cheese.
