Coffee Cake Muffins

Ingredients

• 1 1/2 cups flour
• 2 tsp baking powder
• 1/2 tsp salt
• 1/4 cup butter, softened
• 1/2 cup sugar
• 1 egg
• 3/4 cup milk
• 1/2 tsp vanilla
• Spice Mixture: (mix together)
• 1/2 cup brown sugar
• 2 tbsp flour
• 1 tsp cinnamon

Preparation

Step 1

Pre heat oven to 400. Combine flour, baking powder and salt in large bowl. Stir and make a well. In another bowl combine butter, sugar and egg. Mix in milk and vanilla. Pour into well. Stir just to moisten. Spoon part of batter into muffin tins (about 1/2 full) Sprinkle spice mix over top then continue to fill to 3/4 full with batter. Then sprinkle topping on top and bake for 20 to 25 minutes.
