Ingredients
- 1 (14.5-oz.) can diced tomatoes, un-drained
- 1 cup chopped onion
- 2 tablespoons chopped chipotle chili peppers, or to taste
- 3 cloves garlic, pressed
- 2 teaspoons dried oregano
- 1 bay leaf
- 1 1/2 cups shredded cooked chicken breast meat
- 6 cups low sodium chicken broth
- 1/2 cup lime juice
- Salt and pepper, to taste
- 1/2 cup chopped cilantro

Preparation
Step 1
In a large saucepan, combine tomatoes, onion, chili peppers, garlic, oregano and bay leaf; cook over medium-high heat for 10 minutes, stirring occasionally. Add chicken, broth and lime juice. Bring to boil, reduce heat to medium-low and simmer for 30 minutes. Remove and discard bay leaf. Season soup with salt and pepper to taste. Top each serving with chopped cilantro.
