Ingredients
- Non-aerosol cooking spray
- 1/4 cup chopped onion
- 6 ounces fresh baby spinach leaves
- 1 1/2 cups low sodium chicken broth
- 1/2 cup low fat sour cream
- 1 cup cooked whole wheat spaghetti, cut into 1-inch pieces
- 1 cup chopped cooked chicken breast meat
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground nutmeg

Preparation
Step 1
Coat a medium saucepan with cooking spray over medium-high heat; add onion and spinach and stir-fry until spinach is limp, about 3 minutes. Add broth. Using an immersion blender (OR pour soup into a blender), puree in batches, being careful not to splatter the hot liquid. Add remaining ingredients and simmer for 5 minutes to heat through.
