Ingredients

  • 6 chicken breast halves
  • 3 medium sweet potatoes (about 1-1/4 pounds) unpeeled and cut into 3/4 inch chunks
  • 1 small onion, diced
  • 1 medium celery stalk, diced
  • 1/2 cup apple juice
  • 1 tsp salt
  • 1/2 tsp Italian seasoning
  • 2 9-oz packages frozen cut green beans, thawed

Step 1

Preheat oven to 375 degrees.

Cut each breast into four pieces. In a 3-quart casserole, add chicken and next 6 ingredients; toss well.

Cover casserole and bake 40 minutes, stirring occasionally.

Stir in green beans; bake 20 minutes longer or until tender, stirring occasionally.
