- 3 cups milk
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1/2 cup raisins
- zest of 1 lemon, grated
- 1/2 teaspoon cinnamon, optional

Step 1
Great way to use leftover cooked rice is to make this easy rice pudding.
In a medium saucepan combine cooked rice, sugar, milk, and butter together with vanilla extract and raisins. Bring to a boil.
Cook on low heat until all of the milk is absorbed (about 25 minutes). Add lemon zest and cinnamon.
Serve warm or chilled.
Yield: 4 to 6 servings
