Preparation
Step 1
Recipe makes 6 tortillas (7 inches)
1. I setup my mise en place by stirring the flour with the salt and chopping the butter into small pieces.
2. By using my hands I gradually combined the butter into the flour. It will take a few minutes to work it all together, but eventually it will be nice and consistently crumbly.
3. Gradually pour in the water. I needed a little less than 1/3 cup. As you work the dough it will become nice and elastic-like almost immediately.
4. I then kneaded the dough for a good 5-10 minutes on a clean dry surface. Then rolled it out with my hands a bit to section into six parts.
5. After the six balls are formed, I popped them back into a clean bowl and covered for an hour.
6. I then rolled the dough out nice and thin to a 7″ diameter.
7. With a pan heated to medium high heat I quickly cooked the tortillas up in a matter of seconds. Probably 30 seconds on each side. Then transfer to a plate and keep warm under a kitchen towel.
